My Hectic Month


Haven't had much time to blog the past few weeks, it's been uncommonly busy for me.
 My oldest grandson Jake arrived from NC on December 15th to stay with us through January 6th  because my daughter and son in-law had to drive to Chicago for a family emergency with my son in-laws mother who was diagnosed with a very rare brain  deteriorating disease and only has a short time left with them. We decided when Jake arrived we would have him spend time between both grandmas here in Cali for the holidays since there was so much to do, but the day before he arrived grandma Wree's sister suffered a stroke and his visit with her had to wait a few days. 
Sunday Dec. 16, I picked my mother up for her stay here with us through the 24th and after a week of preparations and our family gathering on the 22nd she wasn't feeling well. I ended up dialing 911 and calling an ambulance to our home after we said our last goodbye that evening. Turned out mom suffered a minor heart attack and we spent the next 48 hrs in the hospital under evaluation, controlling HR and they placed her on blood  thinners. 
Twenty years prior mom suffered a major heart attack and has been on meds ever since. Mom's meds have been adjusted a few times over the years and turns out that's all that needed to be done again Thank God. We are blessed that she made it home for Christmas. 
Well it's not over yet! Today we go to Chuck E Cheese for a family birthday party, tomorrow Universal Studios, Sunday we celebrate Christmas again with my sons because they both worked Christmas Eve and Christmas Day, then we are off to the Tournament of Roses Parade on Tuesday. Busy busy busy.
Believe me, I am really looking forward to our New Year's toast and ringing in the New Year with all of you after the month I've had.

Nuts or No Nuts? That is the question.



    ~~Grandma Sally's Famous Creamy Christmas Fudge~~

These are a few of my favorite things.


3 cups  sugar
1-1/2 sticks butter or margarine ( I use Parkay margarine sticks)
1 small  can (5 oz.) evaporated milk 
1-1/2 packages NestlĂ© Semi Sweet Morsels (18 oz) 
1 jar (7 oz.) JET-PUFFED Marshmallow Creme
1 cup chopped diamond walnuts (optional)
1 tsp.  vanilla
9-inch square foil pan
In a 3-qt. saucepan on stovetop over medium heat, melt butter, add milk and sugar, stirring constantly with wooden spoon. Bring to a full rolling boil, then lower heat, and continue stirring until candy thermometer reaches 235*F. My secret is I stir constantly for 10 min while it's boiling. The object is to have a smooth creamy fudge, no granules!! Remove from heat. Add morsels, and stir until fully melted, then add vanilla. Quickly add marshmallow cream, and  blend until fudge has a complete milk chocolate look.

Stir in walnuts, and quickly pour in foil pan. Spread to cover whole pan evenly. Let sit at room temperature until cooled completely. I usually cover with wax paper after it cools, and let it sit overnight. Cut into small squares, and enjoy!

OMG! Cinnamon Rolls



MY MOUTH IS WATERING JUST THINKING OF THESE.

Ingredients
Dough:
1/4-ounce package yeast
1/2 cup warm water
1/2 cup scalded milk
1/4 cup sugar
1/3 cup butter or shortening
1 teaspoon salt
1 egg
3 1/2 to 4 cups all-purpose flour
Filling:
1/2 cup melted butter, plus more for pan
3/4 cup sugar, plus more for pan
2 tablespoons ground cinnamon
3/4 cup raisins, walnuts, or pecans, optional
Glaze:
4 tablespoons butter
2 cups powdered sugar
1 teaspoon vanilla extract
3 to 6 tablespoons hot water
Directions
Heat oven to 350 degrees F.

In a small bowl, dissolve yeast in warm water and set aside. In a large bowl mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.

When doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle. Spread melted butter all over dough. Mix sugar and cinnamon and sprinkle over buttered dough. Sprinkle with walnuts, pecans, or raisins if desired. Beginning at the 15-inch side, role up dough and pinch edge together to seal. Cut into 12 to 15 slices.

Coat the bottom of baking pan with butter and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes. Bake for about 30 minutes or until nicely browned.

Meanwhile, mix butter, powdered sugar, and vanilla. Add hot water 1 tablespoon at a time until the glaze reaches desired consistency. Spread over slightly cooled rolls.

Happy & Sad


A grandson for Christmas! Although I'm thrilled my oldest will be with us for Christmas I am very sad about the circumstances. My daughter's mother in-law has been having health issues the last couple months and was diagnosed with Jakob's Disease yesterday. This very rare disease gives her merely months or weeks to live and her health is deteriorating very rapidly so they are on their way to Chicago to be with her. Lots of prayers are needed and are very much appreciated.

Thoughts and Prayers

It's christmas time, it's supposed to be the most wonderful time of the year right? Why do  emotions and stress levels seem to intensify this time of the year? 
Could it be that we want everything to be perfect, that we expect more from people other than the same drama that fills the rest of the year? I know I do. I'm so exhausted from putting myself out to help those who have no intension on helping themselves, yet for me it's family and my heart aches because I care.  Being the youngest of 6 and pushing 50 I feel like I'm falling apart trying to keep others together for the sake of our mother. I want to know when it became ok for some to be so selfish, to not have a care in the world as to what their selfishness and the destruction of the very life they've been given does to those who love and care about them? 
Addiction is a killer! It doesn't matter to what, it destroys everything! relationships, trust, health, self esteem, family, everything and anything that could have been wonderful. It takes all that is good inside a person and trashes it. No one ever said that life was easy, everybody makes mistakes, but when is enough enough? Why is it that one can be given so many opportunities time and time again to change the bad choices to good and they still choose the bad? I will never understand what ticks inside certain people that they can't appreciate anything, including the gift of life itself, or how they can single handedly destroy themselves having absolutely no regard for the others in their life.
All I can say is that I pray they will find the strength to overcome the sickness and know that they are loved.

Sunday's Story



December 2nd, We are one day closer to Christmas! It's been a very busy week at grandma's house. I am very happy with my newly-painted kitchen. Grandpa is home from his final trip of the year, and other than shopping and baking, I think we are ready for the holidays, so bring it on! 
I haven't done too much since Friday. It's been raining here in So Cal the last few days and a little colder than I'm accustomed to. Grandpa and I enjoyed date night with a nice dinner out, then went to see the movie "Lincoln." It was very good, and dinner was yummy! 
Sunday is Football day, so there won't be much activity in our home today except the trips to the fridge. Go Bears!
I'm excited to say we are in the process of pairing up partners for our New Year's Cocktail Glass Exchange and want to thank you all for signing up! Please make sure we have all of your correct information, and make sure to check your emails. We are really looking forward to ringing in the New Year with you ladies. If you didn't get a chance this year, we hope to see you for the second annual next year.
